FSSAI has introduced a new draft amendment (June 4, 2025) to the Food Safety and Standards (Food Products Standards and Food Additives) Regulations, 2011, specifically incorporating cheese powder as a distinct product standard. The definition covers cheese powder produced from dried cheese or cheese slurry and stipulates strict compositional criteria: minimum 40% milk fat (dry basis), maximum 5% moisture, and up to 5.5% added salt. Only potable water, sodium chloride, and approved additives (within specified limits) are permitted. The draft outlines stringent safety and quality conditions, including contaminant, toxin, residue, and microbiological limits, plus cleanliness, sampling, labeling, and hygienic manufacturing norms.
